Sweet & Sour Chicken Skewers

I am summer lovin'. Sounds of Olivia Newton John and John Travolta are floating through head. Who doesn't love that movie. You'll want to go out and rent Grease now.

But back to the heat. It's grill season. That means get the heat out of the kitchen and put it out on the patio. In my house that also means hubby helps with dinner. Try this one. I think you'll love it!


Ingredients:
1 lb. boneless, skinless chicken breast, cut into bite sized chunks
2 med red onions, cut into large chunks
2 cups large pineapple chunks (its worth the trouble of cutting fresh)
2 med zucchini, cut into large chunks
2 red bell pepper cut into large chunks
Salt and pepper
3 Tbsp ketchup
1 Tbsp maple syrup
1/2 Tbsp soy sauce
1 Tbsp rice vinegar
1 tsp sriracha hot sauce
Fresh chopped cilantro (optional)
8 wooden or metal skewers (if wooden, soak in water 20 minutes prior to use)

1. Preheat grill. Thread the chicken, zucchini, pineapple, onion, and pepper chunks onto the skewers and season them with salt and pepper.
2.In a mixing bowl, stir together ketchup, maple syrup, soy sauce, vinegar, and sriracha sauce. Set aside half the glaze in a separate dish. Brush the rest onto the skewers.
3. Grill the skewers until the chunks are lightly charred and the chicken is cooked through. About 4 minutes on each side. Then use a clean brush to coat the skewers with the extra sauce before serving. Top with cilantro is you'd like.
Makes 4 servings.
